  • 4 medium zucchini, thinly sliced

  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh basil or parsley, chopped
  • 1/4 cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
  2. Reserve 1 cup of pasta water before draining the spaghetti.
  3. In a large skillet, melt butter with olive oil over medium heat.
  4. Add minced garlic and cook for 1 minute until fragrant.

  7. Add the cooked spaghetti to the skillet and toss everything together.
  8. Pour in small amounts of reserved pasta water until the sauce coats the pasta smoothly.
  9. Stir in parmesan cheese until melted and creamy.
  10. Top with fresh basil or parsley before serving.
