Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 1/2 cup mayonnaise
  • 1 1/2 tbsp yuzu juice (or lemon and lime mix)
  • 1 1/2 tsp Old Bay seasoning
  • 1/3 cup celery, finely chopped
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard (optional)
  • 1 tbsp fresh parsley, chopped
  • 4 brioche or split-top rolls
  • 2 tbsp butter (for toasting)
  • Lettuce leaves (optional)
  • Salt and black pepper to taste

Instructions

  1. Bring a pot of salted water to a boil and cook shrimp for 2–3 minutes until pink and opaque.
  2. Transfer shrimp immediately to an ice bath, then drain and pat dry.
  3. Chop shrimp into bite-sized pieces and set aside.
  4. In a bowl, whisk together mayonnaise, yuzu juice, lemon juice, Dijon mustard, and Old Bay seasoning.
  5. Add chopped celery and parsley to the dressing and mix well.
  6. Fold in the shrimp gently until evenly coated.
  7. Cover and refrigerate the mixture for at least 30 minutes.
  8. Butter the rolls and toast them in a skillet over medium heat until golden brown.
  9. Fill each roll generously with the chilled shrimp mixture.
  10. Add lettuce if desired and serve immediately.

Notes

  • Use fresh shrimp for the best taste, but frozen shrimp works if properly thawed.
  • Do not overcook shrimp as it can become rubbery.
  • Chill the filling before serving for enhanced flavor.
  • Toast rolls just before assembling to keep them crisp.
  • Adjust yuzu and Old Bay seasoning to suit your taste preference.
  • Store shrimp filling in an airtight container in the fridge for up to 2 days.
