Tasty Watermelon Sugar Cookies are vibrant, fruity cookies that mimic the look and flavor of watermelon slices. Perfect for summer parties, picnics, or care packages, these playful treats are easy to make and fun to decorate.

  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter (softened)
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 package (3 oz) watermelon-flavored gelatin
  • 1 tsp vanilla extract
  • Red or pink food coloring (as needed)
  • Green food coloring (as needed)
  • ½ cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in watermelon gelatin and vanilla extract.
  4. Gradually mix in the dry ingredients until combined.
  5. Divide the dough into two portions. Color one portion pink and the other green.
  6. Shape pink dough into discs and wrap the edges with green dough to mimic watermelon slices.
  7. Flatten slightly and press mini chocolate chips on top for ‘seeds.’
  8. Place on prepared baking sheet and bake for 8–10 minutes, or until edges are slightly golden.
  9. Cool on wire racks before serving or storing.

Notes

  • Use watermelon extract or candy oil if gelatin isn’t available.
  • Chill dough if it’s too soft to handle after coloring.
  • For vegan option, use flax eggs and plant-based margarine.
  • Cookies can be frozen for up to 3 months.
