Watermelon Gazpacho is a refreshing chilled soup made with juicy watermelon, fresh vegetables, and herbs, creating a light, hydrating, and flavorful summer dish.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 2 medium ripe tomatoes
  • 1 cup cucumber, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup red onion
  • 1 clove garlic
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar or lime juice
  • 2 tablespoons fresh mint or basil
  • Salt and pepper to taste

Instructions

  1. Add watermelon, tomatoes, cucumber, bell pepper, onion, and garlic to a blender.
  2. Blend until smooth or slightly chunky based on preference.
  3. Add olive oil, vinegar or lime juice, and herbs.
  4. Blend briefly to combine all ingredients.
  5. Taste and adjust seasoning with salt and pepper.
  6. Transfer to an airtight container.
  7. Refrigerate for 1–2 hours to chill.
  8. Stir and serve cold with garnish if desired.
