  • 4 cups Fritos corn chips
  • 2 cups shredded cheddar cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 can diced tomatoes with green chilies
  • 1/2 cup diced onion
  • 1 cup shredded lettuce (optional)
  • 1/2 cup diced tomatoes for topping (optional)
  • 1/2 cup sour cream (optional)
  • 1 avocado, diced (optional)
  • Jalapeños, cilantro, salsa, green onions, and olives for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish.
  3. Cook ground beef in a skillet over medium heat until browned.
  4. Drain excess grease.
  5. Add taco seasoning and water and simmer until thickened.
  6. Stir in black beans, corn, tomatoes, and onion.
  7. Spread half of the Fritos in the baking dish.
  8. Layer the beef mixture over the chips.
  9. Sprinkle shredded cheddar cheese evenly over the top.
  10. Add the remaining Fritos.
  11. Bake for 20 to 25 minutes until hot and bubbly.
  12. Remove from the oven.
  13. Top with lettuce, tomatoes, sour cream, avocado, and desired garnishes.
  14. Serve immediately.
