Light, fresh, and full of colorful vegetables, Vegan Rice Paper Rolls are a healthy plant-based dish inspired by Vietnamese cuisine. These rolls combine crisp veggies, herbs, and tofu wrapped in soft rice paper, served with flavorful dipping sauces like peanut or soy-ginger.

  • 810 rice paper wrappers (8.5-inch size)
  • 1 cup carrots, julienned
  • 1 cup cucumber, julienned
  • 1 cup red cabbage, thinly sliced
  • 1 red bell pepper, julienned
  • 1 avocado, sliced
  • 1 cup lettuce leaves or mixed greens
  • 1 cup cooked rice vermicelli noodles (optional)
  • 1 cup firm tofu, marinated and grilled
  • 1/4 cup fresh mint leaves
  • 1/4 cup cilantro leaves
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon lime juice

Instructions

  1. Prepare all vegetables by washing and cutting them into thin strips. Set aside in small bowls for easy access.
  2. Marinate tofu in soy sauce, sesame oil, and lime juice for 15 minutes, then bake or grill until golden. Let it cool.
  3. Fill a shallow dish with warm water. Dip one rice paper wrapper for 10–15 seconds until slightly soft.
  4. Lay the rice paper flat on a damp surface or towel.
  5. Place lettuce or herbs in the center as a base, then layer vegetables, tofu, and noodles on top.
  6. Fold the sides inward, then roll from the bottom up tightly but gently to form a neat roll.
  7. Repeat with remaining ingredients until all rolls are made.
  8. Serve immediately with peanut, sweet chili-lime, or soy-ginger dipping sauce.

Notes

  • Do not overfill the rice paper; this helps prevent tearing.
  • Keep finished rolls covered with a damp towel to avoid drying out.
  • For extra freshness, use a combination of mint, basil, and cilantro.
  • Store leftover rolls in an airtight container for up to 24 hours.
