Unicorn Cheesecake Bites are colorful, no-bake mini cheesecakes made with creamy layers of pastel swirls and a buttery graham cracker crust. Perfect for birthdays, parties, and fun celebrations, these magical treats combine easy preparation with eye-catching presentation.

  • 16 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • Gel food coloring (pink, purple, blue, yellow)
  • Whipped cream (for topping)
  • Rainbow sprinkles (optional)
  • Edible glitter (optional)

Instructions

  1. In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
  2. Add the vanilla extract and heavy cream, then continue mixing until fluffy.
  3. In a separate bowl, combine graham cracker crumbs and melted butter to form the crust.
  4. Press the crust evenly into the bottom of a lined 8×8 inch pan and refrigerate while preparing the filling.
  5. Divide the cheesecake filling into four bowls and add a few drops of gel food coloring to each.
  6. Spoon the colored batters randomly over the crust and gently swirl with a knife for a marbled effect.
  7. Cover with plastic wrap and refrigerate for at least 4 hours or overnight until set.
  8. Lift the cheesecake out of the pan using the parchment paper and cut into bite-sized squares.
  9. Top with whipped cream, edible glitter, or sprinkles before serving.

  • Use gel food coloring instead of liquid to prevent thinning the batter.
