Taco Pasta Salad is a hearty Tex-Mex dish featuring pasta, seasoned ground beef, cheese, fresh vegetables, and a creamy taco-inspired dressing. Perfect for potlucks, cookouts, meal prep, and family dinners.

  • 12 ounces rotini pasta
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 2 cups chopped romaine lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced bell pepper
  • 1/4 cup sliced green onions
  • 1 cup shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon taco seasoning (for dressing)
  • 1 tablespoon lime juice
  • 1 cup crushed tortilla chips

Instructions

  1. Cook pasta according to package directions until al dente.
  2. Drain and rinse under cold water.
  3. Brown ground beef in a skillet and drain excess grease.
  4. Add taco seasoning and water and cook until thickened.
  5. Allow beef and pasta to cool completely.
  6. Whisk together sour cream, mayonnaise, taco seasoning, and lime juice.
  7. Combine pasta, beef, lettuce, tomatoes, bell peppers, green onions, cheese, black beans, and corn in a large bowl.
  8. Add dressing and toss to coat evenly.
  9. Refrigerate for at least 30 minutes.
  10. Top with crushed tortilla chips before serving.
  11. Serve chilled.
