  • 8 small flour or corn tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup sour cream or plain yogurt
  • 1/2 cup water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, cook ground beef or chicken until fully cooked.
  3. Add chopped onion and garlic, and cook until softened.
  4. Stir in taco seasoning, diced tomatoes, and water. Simmer for 5–7 minutes.
  5. Mix in sour cream or yogurt until combined.
  6. In a baking dish, place a layer of tortillas on the bottom.
  7. Add a layer of the meat mixture, followed by shredded cheese.
  8. Repeat layers until all ingredients are used, finishing with cheese on top.
  9. Bake for 25–30 minutes until cheese is melted and bubbly.
  10. Let rest for 5–10 minutes before serving.
