Sunshine Salad is a refreshing, vibrant fruit salad combined with a creamy vanilla pudding base, perfect for summer gatherings, potlucks, or a healthy snack. It’s quick to prepare, Weight Watchers-friendly, and customizable with your favorite fruits.

Ingredients

  • 1 package sugar-free vanilla pudding mix (JELLO)
  • 1 can mandarin oranges (drain and reserve syrup)
  • 1 fresh pineapple, chopped
  • 2 bananas, sliced
  • Optional: additional fresh citrus fruits (grapefruit, orange slices)
  • Optional: crisp greens (for serving)
  • Optional add-ins: toasted coconut flakes, chopped nuts, mint leaves

Instructions

  1. Drain the canned mandarin oranges, reserving the syrup.
  2. In a large mixing bowl, combine the sugar-free vanilla pudding mix with the reserved mandarin orange syrup. Whisk until smooth and slightly thickened.
  3. Chop the fresh pineapple and slice the bananas.
  4. Gently fold the fruit into the pudding mixture, taking care not to mash the bananas.
  5. If using, add additional citrus fruits and optional add-ins.
  6. Chill the Sunshine Salad in the refrigerator for at least 30 minutes before serving.
  7. Serve in a large bowl or individual cups. Optionally garnish with mint leaves or citrus zest.

Notes

  • Prepare the salad up to a day in advance but add bananas just before serving to prevent browning.
  • For a Weight Watchers-friendly version, avoid adding whipped toppings or marshmallows.
  • You can substitute pudding mix with whipped Greek yogurt or coconut cream for variation.
