  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon lemon juice
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon lemon zest (optional)
  • Extra Parmesan cheese for serving

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook pasta according to package directions until al dente.
  3. Reserve 1 cup of pasta water before draining.
  4. Heat olive oil in a large skillet over medium heat.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Add sliced zucchini and yellow squash.
  7. Cook for 6 to 8 minutes, stirring occasionally, until tender.
  8. Season with salt, black pepper, and red pepper flakes.
  9. Add drained pasta to the skillet.
  10. Stir in Parmesan cheese and lemon juice.
  11. Add reserved pasta water gradually until a light sauce forms.
  12. Toss until everything is evenly coated.
  13. Remove from heat and add fresh basil.
  14. Garnish with extra Parmesan and lemon zest if desired.
  15. Serve immediately.
