Ingredients

  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Wash and dry kale thoroughly, then remove stems and chop leaves.
  2. Massage kale with olive oil for 2–3 minutes until tender.
  3. Slice peaches and rinse blueberries.
  4. Thinly slice red onion and soak if needed.
  5. Whisk olive oil, lemon juice, honey, salt, and pepper in a bowl.
  6. Combine kale, peaches, blueberries, and onion in a large bowl.
  7. Pour dressing over salad and toss gently.
