  • 3 cups cold water
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 8 ounces whipped topping
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries (optional)
  • 1 cup blueberries (optional)
  • Fresh mint leaves for garnish (optional)
  • Whipped cream for serving (optional)

Instructions

  1. Place the graham cracker crust in a pie plate or serving tray.
  2. Dissolve the first gelatin flavor in 1 cup boiling water.
  3. Add 1 cup cold water and stir until combined.
  4. Allow the mixture to cool slightly.
  5. Pour the first gelatin layer into the crust and refrigerate until partially set.
  6. Beat softened cream cheese until smooth and creamy.
  7. Add powdered sugar and vanilla extract and mix thoroughly.
  8. Fold in whipped topping until light and fluffy.
  9. Spread a layer of cream mixture over the partially set gelatin.
  10. Prepare the second gelatin flavor and cool slightly.
  11. Carefully pour the second gelatin layer over the cream layer.
  12. Chill until partially set.
  13. Repeat the process with remaining gelatin flavors and cream layers.
  14. Refrigerate overnight or until fully set.
  15. Decorate with fresh fruit and whipped cream before serving.
  16. Slice with a sharp knife and serve chilled.
