Street Corn Cucumber Salad is a creamy and refreshing salad inspired by Mexican street corn, combining crisp cucumbers, sweet corn, tangy lime, creamy dressing, and a touch of spice. It’s perfect as a summer side dish or light meal.

  • 2 large English cucumbers, sliced
  • 2 cups corn kernels (fresh, grilled, frozen, or canned)
  • 1/3 cup mayonnaise or Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon chili powder or smoked paprika
  • 1/4 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/3 cup crumbled cotija cheese or feta cheese
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Wash the cucumbers, trim the ends, and slice into bite-sized pieces.
  2. Lightly salt the cucumbers and let them rest for 10 minutes, then pat dry.
  3. If using fresh corn, grill or sauté until lightly charred; let cool.
  4. In a bowl, whisk together mayonnaise or Greek yogurt, lime juice, chili powder, salt, and black pepper.
  5. Add cucumbers and corn to a large mixing bowl.
  6. Pour the dressing over the vegetables and toss gently to coat.
  7. Fold in crumbled cheese and chopped cilantro.
  8. Chill for 15–20 minutes before serving.
