A bold and vibrant bowl combining marinated grilled chicken, creamy Mexican street corn salad, and fluffy rice, perfect for summer dinners or meal prep.

  • 4 small boneless, skinless chicken breasts
  • 1 batch chicken marinade
  • 2 cups grilled corn (approx. 34 cobs)
  • 1/3 cup mayo
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh cilantro, chopped
  • 12 tablespoons lime juice
  • 1/2 tablespoon garlic, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup red onion, diced
  • 1/4 cup cotija cheese, crumbled
  • 4 cups cooked rice (jasmine, basmati, brown, etc.)
  • Black beans (optional)
  • Cherry tomatoes, halved (optional)
  • Jalapeño slices (optional)
  • Lime wedges (optional)
  • Additional fresh cilantro leaves (optional)
  • Sour cream (optional)
  • 12 avocado, sliced (optional)

Instructions

  1. Marinate chicken in your preferred marinade for at least 15 minutes or up to 1 hour.
  2. Preheat grill to medium-high heat (about 400–450°F).
  3. Grill chicken on direct heat for 4–6 minutes per side, then transfer to indirect heat and cook an additional 5–7 minutes, or until internal temp reaches 165°F.
  4. Let chicken rest for 5 minutes before slicing.
  5. Rub corn with olive oil and a pinch of salt, then grill on high heat for 10–12 minutes, turning frequently until slightly charred.
  6. Cut corn kernels off the cob and mix in a bowl with mayo, feta, cotija, cilantro, lime juice, garlic, red onion, and seasonings to make the corn salad.
  7. Assemble bowls by layering rice, sliced grilled chicken, and street corn salad.
  8. Top with desired toppings like black beans, avocado, tomatoes, jalapeño, lime wedges, and sour cream.
