Strawberry Rhubarb Chia Jam is a healthy homemade fruit spread made with fresh strawberries, tart rhubarb, and chia seeds for natural thickening.

Ingredients

  • 2 cups strawberries, chopped
  • 1 cup rhubarb, chopped
  • 2 tablespoons chia seeds
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Wash and chop the strawberries and rhubarb.
  2. Add the fruit to a saucepan and cook over medium heat for about 10 minutes.
  3. Stir occasionally while the fruit softens and releases juices.
  4. Lightly mash the fruit for a smoother jam texture.
  5. Remove from heat and stir in chia seeds.
  6. Add honey or maple syrup and lemon juice.
  7. Allow the mixture to cool for 10–15 minutes as it thickens.
  8. Transfer the jam to a clean jar and refrigerate before serving.

Notes

  • The jam will thicken as it cools.
  • Add more sweetener if the rhubarb is very tart.
  • Store the jam in the refrigerator for up to two weeks.
  • The jam can also be frozen for longer storage.
