  • 2 eggs

  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, chopped
  • 1 cup rhubarb, chopped
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together eggs, sugar, oil, milk, and vanilla.
  4. Gradually mix the wet ingredients into the dry ingredients.
  5. Fold the chopped strawberries and rhubarb into the batter.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50–60 minutes until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool before slicing.
