This Strawberry Matcha Latte is a refreshing iced drink made with homemade strawberry syrup, whipped strawberry cold foam, and layered ceremonial matcha over your choice of milk. It’s delicious, visually stunning, and perfect for summer.

Ingredients

  • 2 teaspoons ceremonial grade matcha
  • 2 tablespoons hot water (175°F)
  • 1 tablespoon honey (or maple syrup)
  • ½ cup chopped fresh strawberries
  • ¼ cup sugar
  • ¼ cup water
  • 2 tablespoons heavy cream (or coconut cream for vegan)
  • ¾ cup milk of choice (oat, almond, whole, or coconut)
  • Ice (enough to fill a glass)

Instructions

  1. Prepare the strawberry syrup: In a saucepan over medium heat, combine chopped strawberries, sugar, and water. Simmer for 8–10 minutes until softened. Strain and cool the syrup.
  2. Make the strawberry foam: Whip heavy cream with 1 tablespoon of the strawberry syrup until soft and pourable. Set aside.
  3. Whisk the matcha: Sift 2 teaspoons of matcha into a small bowl. Add 2 tablespoons of hot water and whisk vigorously in a zigzag motion until frothy. Stir in honey.
  4. Assemble the latte: Fill a glass with ice. Pour in the milk of your choice. Gently pour in the matcha layer over a spoon to maintain separation. Top with the whipped strawberry foam.
  5. Serve immediately, stirred or layered.
