These easy Strawberry Crumb Bars are the perfect summer dessert, made with a buttery crust, juicy strawberry filling, and a golden crumb topping. Ideal for picnics, potlucks, or a casual treat at home.

  • 1/2 cup white sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup very cold butter (1 stick)
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, chopped
  • 1/3 cup white sugar (for filling)
  • 2 teaspoons cornstarch

Instructions

  1. Preheat oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, mix flour, 1/2 cup sugar, baking powder, and salt.
  3. Cut in very cold butter using a fork, pastry cutter, or food processor until crumbly.
  4. In a small bowl, beat the egg and add it with vanilla to the flour mixture. Stir until combined.
  5. Press half the dough into the bottom of the prepared pan.
  6. In another bowl, mix 1/3 cup sugar with cornstarch. Stir in chopped strawberries until evenly coated.
  7. Spoon the strawberry mixture evenly over the crust layer.
  8. Crumble the remaining dough on top of the strawberries.
  9. Bake for 40–45 minutes or until golden brown on top.
  10. Cool completely before cutting into bars. Refrigerate for cleaner cuts.
