  • 1 cup nectarines, pitted and sliced
  • 1 cup plums, pitted and sliced
  • 1/2 cup apricots, pitted and sliced
  • 1/2 cup cherries, pitted
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon honey or maple syrup (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Wash all stone fruits thoroughly.
  2. Remove pits and slice peaches, nectarines, plums, and apricots into chunks.
  3. Pit the cherries and set aside.
  4. Combine sugar and water in a small saucepan over medium heat.
  5. Stir until the sugar completely dissolves to create a simple syrup.
  6. Remove from heat and allow the syrup to cool completely.
  7. Add all prepared fruit to a blender or food processor.
  8. Pour in the cooled syrup and lemon juice.
  9. Blend until completely smooth.
  10. Strain the mixture through a fine-mesh sieve if a smoother texture is desired.
  11. Cover and refrigerate the fruit mixture for at least 2 hours until thoroughly chilled.
  12. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  13. Transfer the sorbet to a freezer-safe airtight container.
  14. Freeze for 2 to 4 hours or until firm.
  15. Allow the sorbet to sit at room temperature for 5 minutes before scooping.
  16. Serve garnished with fresh mint if desired.
