A cozy, customizable homemade Starbucks Pumpkin Spice Coffee Syrup recipe that brings warm fall flavors to your coffee, lattes, teas, and desserts—all made with real pumpkin and pantry spices.

  • 1 cup water
  • 1 cup brown sugar (or monkfruit for sugar-free)
  • 2 tablespoons pumpkin purée (not pie filling)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan over medium heat, combine water and brown sugar. Stir until fully dissolved.
  2. Add cinnamon, ginger, nutmeg, and cloves. Stir to combine and allow spices to bloom for 2–3 minutes.
  3. Whisk in the pumpkin purée and vanilla extract until fully incorporated.
  4. Reduce heat and simmer for 5–7 minutes, stirring occasionally, until slightly thickened.
  5. Remove from heat and let cool completely.
  6. Strain the syrup for a smoother texture if desired, then transfer to a clean, airtight glass container.
  7. Store in the refrigerator for up to 2 weeks. Shake before each use.

  • Use pure pumpkin purée, not pumpkin pie filling.
  • Adjust sweetness by adding more or less sugar or using alternatives like monkfruit or maple syrup.
  • Strain for a smoother syrup texture, especially if using in cold drinks.
