  • 1 large ripe avocado, sliced
  • 1 cup cucumber, thinly sliced
  • 1/2 cup radishes, thinly sliced
  • 1/2 cup shredded carrots
  • 2 tablespoons green onions, sliced
  • 2 tablespoons sunflower seeds or pumpkin seeds (optional)
  • 2 tablespoons fresh parsley or basil, chopped (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the spring greens thoroughly under cold water and dry them using a salad spinner or clean kitchen towel.
  2. Place the dried greens in a large salad bowl.
  3. Slice the cucumber into thin rounds and thinly slice the radishes.
  4. Shred the carrots and slice the green onions.
  5. Add the cucumber, radishes, carrots, and green onions to the bowl with the greens.
  6. Cut the avocado in half, remove the pit, and slice the avocado into cubes or thin slices.
  7. Add the avocado gently to the salad bowl.
  8. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper.
  9. Whisk until the dressing becomes smooth and well combined.
  10. Drizzle the dressing over the salad just before serving.
  11. Gently toss the salad so all ingredients are evenly coated.
  12. Top with sunflower seeds and fresh herbs if desired, then serve immediately.
