Spicy Cucumber Salad is a bold and refreshing salad made with crisp cucumbers tossed in a tangy, spicy dressing. It delivers the perfect balance of heat, crunch, and freshness, making it an ideal side dish or light snack.

  • 4 Persian or mini cucumbers, thinly sliced
  • 1 teaspoon salt (for salting cucumbers)
  • 2 tablespoons rice vinegar or white vinegar
  • 1 tablespoon chili oil or chili flakes (adjust to taste)
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons sliced green onions (optional)

Instructions

  1. Wash the cucumbers thoroughly and slice them into thin rounds or half-moons.
  2. Place the cucumbers in a bowl, sprinkle with salt, and toss gently.
  3. Let the cucumbers sit for 10–15 minutes to release excess moisture.
  4. Pat or gently squeeze the cucumbers dry and transfer to a clean bowl.
  5. In a small bowl, whisk together vinegar, chili oil or chili flakes, sesame oil, sugar, and minced garlic.
  6. Pour the dressing over the cucumbers and toss gently to coat evenly.
  7. Sprinkle with sesame seeds and green onions if using.
  8. Let the salad rest for 5–10 minutes before serving.
