Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1/2 cup sourdough discard
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash bananas until smooth.
  3. Add sourdough discard, eggs, sugar, oil, and vanilla extract. Mix well.
  4. In a separate bowl, whisk flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients and mix gently until combined.
  6. Fold in chocolate chips.
  7. Divide batter evenly into muffin cups, filling each about 3/4 full.
  8. Bake for 18–22 minutes until a toothpick inserted comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack.
  10. Serve warm or store for later.

Notes

  • Use very ripe bananas for best sweetness and flavor.
  • Do not overmix the batter to keep muffins light and fluffy.
  • Add a splash of milk if batter is too thick.
  • Store in an airtight container to keep muffins moist.
  • Freeze individually for longer storage.
