Soft Dried Apricot Cookies are chewy homemade cookies filled with sweet dried apricot pieces and buttery cookie dough. These fruity cookies are easy to bake and perfect for snacks or dessert.

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup dried apricots, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl beat the softened butter and sugar until light and creamy.
  3. Add the eggs and vanilla extract and mix until smooth.
  4. In another bowl combine flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until dough forms.
  6. Fold the chopped dried apricots into the dough.
  7. Scoop small portions of dough onto the prepared baking sheet.
  8. Bake for 10–12 minutes until edges are lightly golden.
  9. Allow cookies to cool before serving.

Notes

  • Do not overbake to keep the cookies soft.
  • Chop apricots into small pieces for even distribution.
  • Add chopped nuts for extra texture.
  • Store cookies in an airtight container for up to 4 days.
  • Cookies can be frozen for up to 2 months.
