Smashed Cucumber Salad is a refreshing Chinese-inspired side dish featuring crunchy smashed cucumbers tossed in a savory dressing made with garlic, soy sauce, rice vinegar, sesame oil, and sesame seeds.

Ingredients

  • 2 large English cucumbers
  • 1 teaspoon salt
  • 3 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon chili oil (optional)
  • 1 tablespoon sesame seeds
  • 2 tablespoons sliced green onions

Instructions

  1. Wash and dry the cucumbers thoroughly.
  2. Place cucumbers on a cutting board and gently smash them with the flat side of a large knife.
  3. Cut smashed cucumbers into bite-sized pieces.
  4. Toss with salt and let sit for 15 minutes.
  5. Drain excess moisture.
  6. In a bowl, whisk together garlic, soy sauce, rice vinegar, sesame oil, sugar, and chili oil.
  7. Add cucumbers and toss well to coat.
  8. Sprinkle with sesame seeds and green onions.
  9. Let marinate for 10 minutes before serving.
  10. Serve chilled or at room temperature.
