Slow Cooker Steak Bites are juicy, tender sirloin cubes slow-cooked with garlic, onions, butter, and au jus for a rich, flavorful comfort food meal that’s easy to prepare and perfect for busy weeknights.

Ingredients

  • 3 pounds sirloin steak, cut into bite-sized pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil (or olive, avocado, coconut oil, or butter)
  • 1 small sweet onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 cup unsalted beef stock
  • 1-ounce packet au jus gravy mix (or brown gravy mix)
  • 4 tablespoons unsalted butter, sliced
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Toss steak pieces in a bowl with salt and pepper to season evenly.
  2. Heat a large skillet over medium-high heat and add 1 tablespoon of oil.
  3. Sear steak in batches until browned on all sides. Add more oil if needed.
  4. Transfer browned steak pieces to an 8-quart slow cooker.
  5. Top with sliced onions and garlic, then pour beef stock over the mixture.
  6. Sprinkle the au jus gravy mix evenly over the top.
  7. Place slices of butter across the top of everything in the slow cooker.
  8. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  9. Garnish with fresh chopped parsley if desired and serve hot.

Notes

  • Searing the meat adds more flavor but can be skipped for a quicker prep.
  • Use unsalted beef stock to better control the saltiness of the dish.
  • To thicken the gravy, mix 2 tbsp cold water with 2 tbsp cornstarch and stir it in at the end.
  • Stew meat, chuck roast, or round steak can be substituted for sirloin.
  • Add fresh herbs like rosemary or thyme for an elevated flavor profile.
