Slow Cooker French Wine and Mustard Chicken is a cozy, comforting French-inspired dish made with tender chicken slow-cooked in a creamy Dijon mustard and white wine sauce, finished with herbs, parmesan, and kale.

  • 1 cup dry white wine (Pinot Grigio or Sauvignon Blanc)
  • 1/3 cup heavy cream or full-fat coconut milk
  • 2 tablespoons Dijon mustard
  • 2 tablespoons grainy Dijon mustard
  • 2 shallots, chopped
  • 2 cloves garlic, minced or grated
  • Kosher salt and black pepper, to taste
  • 2 pounds boneless chicken breasts, skin on or off
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon fresh chopped sage
  • 2 tablespoons salted butter
  • 1/3 cup freshly grated parmesan cheese
  • 1/2 bunch kale, chopped
  • Mashed potatoes, rice, or buttered egg noodles for serving

Instructions

  1. In a bowl, whisk together wine, cream, Dijon mustard, grainy mustard, shallots, garlic, salt, and pepper.
  2. Rub chicken with thyme, sage, salt, and pepper. Heat oil in a skillet and sear chicken on both sides for 3 minutes each until golden.
  3. Place chicken in the slow cooker, skin side up. Pour the mustard sauce over and dot with butter.
  4. Cover and cook on low for 4–6 hours or on high for 2–3 hours until chicken is tender.
  5. In the last 30 minutes of cooking, stir in parmesan and chopped kale. Let it wilt into the sauce.
  6. Serve hot over mashed potatoes, rice, or buttered noodles with extra parmesan and herbs if desired.

  • Searing the chicken first enhances flavor and texture.
  • Substitute kale with spinach or broccoli based on preference.
  • For alcohol-free version, use chicken broth and a splash of white wine vinegar.
