  • 14 prawns, sliced in half
  • 1 tsp white pepper
  • 1 tsp salt
  • 1 tbsp Chinese cooking wine (optional)
  • 2 tbsp chopped green onion
  • 1/2 cup rice flour
  • 1/4 cup tapioca starch
  • 1.5 cups water
  • 1 tsp salt
  • 1 tbsp dark soy sauce
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sugar
  • 3 tbsp warm water
  • 1 tbsp sesame oil

Instructions

  1. Marinate prawns with white pepper, salt, and Chinese cooking wine. Set aside for 5 minutes.
  2. Prepare the sauce by mixing dark soy sauce, soy sauce, oyster sauce, sugar, warm water, and sesame oil.
  3. In a bowl, mix rice flour, tapioca starch, water, and salt until smooth.
  4. Prepare the steamer and lightly oil the pan.
  5. Pour 1/2 cup of rice flour mixture into the pan, ensuring an even layer. Steam for 1 minute until slightly translucent.
  6. Sprinkle chopped green onion and place 4 pieces of prawn on the rice sheet. Cover and steam for another 2-3 minutes.
  7. Remove the pan from the steamer and let cool for 2 minutes.
  8. Gently roll the rice sheet around the shrimp using a silicone spatula. Repeat for remaining rolls, mixing batter between portions.
  9. Arrange rolls on a plate, drizzle sauce over them, and garnish with green onion.
