This Romaine Lettuce Salad Christmas Tree is a festive, vegan-friendly Greek-style salad that’s perfect for holiday gatherings. With crisp romaine leaves, seasoned chickpeas, fresh vegetables, and a creamy tahini dressing, it’s both beautiful and delicious.

Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 2 teaspoons olive oil
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon paprika
  • 23 heads romaine lettuce
  • 1/2 cup small diced tomato
  • 1/2 cup sliced kalamata olives
  • 1/2 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/2 cup diced marinated artichoke hearts
  • 2 tablespoons fresh herbs (parsley, dill, mint, or cilantro)
  • 1/2 cup smashed croutons (gluten-free if needed)
  • Salt and black pepper, to taste
  • Tahini Dressing:
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 tablespoon tamari or soy sauce
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon dried herbs (Green Goddess Seasoning, Herbes de Provence, or dried oregano)
  • Salt and black pepper, to taste

Instructions

  1. Rinse, drain, and dry chickpeas thoroughly.
  2. Heat a pan over medium heat with olive oil. Add chickpeas, paprika, garlic, salt, and pepper. Cook for 10 minutes until crispy.
  3. In a bowl, mix tahini, olive oil, red wine vinegar, tamari, garlic, and herbs. Whisk until creamy and smooth.
  4. Chop all veggies into small, even pieces.
  5. Remove outer romaine leaves and layer large leaves on a platter as the tree base, working up with smaller leaves to form the tree shape.
  6. Sprinkle chickpeas and chopped vegetables evenly over the lettuce tree.
  7. Drizzle tahini dressing over the top and garnish with smashed croutons and fresh herbs.
  8. Serve immediately or refrigerate without dressing if preparing in advance.
