Quick One Pot Beef Stroganoff Noodles is a creamy, comforting dinner made with ground beef, tender egg noodles, and a rich stroganoff sauce—all cooked in one pot in about 30 minutes.

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 3 cups low-sodium beef broth
  • 8 ounces egg noodles
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • Salt to taste
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Stir in diced onion and cook for 2–3 minutes until softened. Add garlic and mushrooms and cook until mushrooms release their moisture.
  4. Sprinkle flour over the mixture and stir well to combine.
  5. Pour in beef broth while stirring to prevent lumps. Add Dijon mustard, paprika, and black pepper. Mix well.
  6. Add egg noodles directly into the pot and stir to submerge them in the liquid.
  7. Cover and simmer for 10–12 minutes, stirring occasionally, until noodles are tender and sauce thickens.
  8. Reduce heat to low and stir in sour cream until smooth and creamy.
  9. Taste and adjust salt as needed. Garnish with fresh parsley and serve warm.

Notes

  • Do not overcook the noodles to prevent a mushy texture.
  • Add sour cream over low heat to avoid curdling.
  • If the sauce becomes too thick, add a splash of broth to loosen it.
  • If the sauce is too thin, simmer uncovered for a few extra minutes.
  • Store leftovers in an airtight container for up to 4 days.
