Quick Lemon Ricotta Pasta is a creamy, zesty, and easy pasta dish made with tender noodles, rich ricotta cheese, and fresh lemon for a bright and satisfying meal.

  • 12 oz pasta (spaghetti, fettuccine, linguine, or penne)
  • 1 cup whole milk ricotta cheese
  • 2-3 tablespoons fresh lemon juice
  • 1-2 teaspoons lemon zest
  • 2-3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Optional: fresh basil or parsley, red pepper flakes, spinach, peas, grilled chicken, shrimp, or salmon, toasted pine nuts

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook pasta until al dente according to package instructions.
  3. Reserve 1 cup of pasta water, then drain pasta.
  4. In a bowl, mix ricotta, lemon juice, lemon zest, Parmesan, salt, and pepper until smooth.
  5. Heat olive oil in a large skillet over medium heat.
  6. Add garlic and sauté for 30-60 seconds until fragrant.
  7. Add cooked pasta to the skillet.
  8. Stir in ricotta mixture.
  9. Gradually add pasta water while tossing to create a creamy sauce.
  10. Adjust consistency and seasoning as needed.
  11. Remove from heat and garnish with herbs and extra cheese.
  12. Serve immediately.
