Ingredients

Scale
  • 1 box (16 oz) angel food cake mix
  • 1 can (20 oz) crushed pineapple in juice, undrained
  • 2 cups whipped cream (optional)
  • 1 cup fresh pineapple chunks (optional)
  • 1 cup strawberries (optional)
  • 1 cup blueberries (optional)
  • 1 cup raspberries (optional)
  • 1/2 cup toasted coconut (optional)
  • 2 tablespoons powdered sugar (optional)
  • 1 cup vanilla yogurt (optional)
  • 1/2 cup lemon glaze (optional)
  • 1/2 cup orange glaze (optional)
  • 12 maraschino cherries (optional)
  • 1 tablespoon orange zest (optional)
  • 1 tablespoon lime zest (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish.
  3. In a large mixing bowl, combine the angel food cake mix and the entire can of undrained crushed pineapple.
  4. Stir gently until fully combined. The mixture will become foamy and airy.
  5. Pour the batter into the prepared baking dish.
  6. Spread evenly using a spatula.
  7. Bake for 30 to 35 minutes or until the top is golden brown and springs back when lightly touched.
  8. Remove from the oven and place on a cooling rack.
  9. Allow the cake to cool completely.
  10. Top with whipped cream, fresh fruit, coconut, or other desired toppings.
  11. Slice into squares.
  12. Serve chilled or at room temperature.

Notes

  • Do not drain the crushed pineapple; the juice is necessary for proper texture and moisture.
  • Use only angel food cake mix, not regular cake mix.
  • Avoid overmixing to maintain the cake’s airy structure.
  • The batter will become foamy naturally when mixed.
  • Bake immediately after mixing for the best rise.
  • Cool completely before slicing for cleaner cuts.
  • Whipped cream and fresh fruit make excellent toppings.
  • Store leftovers covered in the refrigerator.
  • This cake tastes even better after chilling.
  • Can be frozen for up to 2 months.
  • Perfect for potlucks, picnics, church events, and holiday gatherings.
  • Add toasted coconut for extra tropical flavor.
  • Fresh berries provide beautiful color and freshness.
  • A light dusting of powdered sugar adds an elegant finish.
