These pumpkin spice waffles are a cozy, fall-inspired breakfast featuring warm spices, pumpkin puree, and a crisp yet fluffy texture—perfect for lazy weekends or meal prep.

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie spice (or 1 tsp each of cinnamon, nutmeg, and ginger)
  • ½ tsp salt
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 2 large eggs
  • 3 tbsp melted butter
  • ¼ cup dark brown sugar
  • 1 cup milk (plus up to ⅓ cup more if needed)

Instructions

  1. Preheat your waffle iron according to manufacturer instructions.
  2. In a large bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In a medium bowl, whisk together pumpkin puree, eggs, melted butter, brown sugar, and milk.
  4. Make a well in the dry ingredients and pour in the wet mixture.
  5. Mix until just combined. Do not overmix. Batter should be thick but pourable. Add extra milk if too thick.
  6. Grease the waffle iron if necessary and pour in the batter.
  7. Cook until golden brown according to your waffle maker’s timing.
  8. Serve hot with desired toppings such as maple syrup, butter, or whipped cream.

Notes

  • Use pure canned pumpkin, not pumpkin pie filling.
  • Don’t overmix the batter to keep waffles fluffy.
  • Freeze extras flat and reheat in toaster for best texture.
  • Optional add-ins: nuts, chocolate chips, dried cranberries.
