Pumpkin French Toast is a cozy, fall-inspired breakfast made with real pumpkin puree, warm spices, and thick slices of bread, crisped to perfection in under 20 minutes.

Ingredients

  • 1 cup milk of choice (2% preferred)
  • 4 large eggs
  • ½ cup pumpkin puree
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • ½ tsp ground cinnamon
  • 8 slices of bread (brioche or Texas toast recommended)

Instructions

  1. In a large bowl, whisk together the milk, eggs, pumpkin puree, sugar, vanilla extract, pumpkin pie spice, and cinnamon until smooth.
  2. Heat a nonstick skillet over medium heat and lightly grease with oil or spray.
  3. Dip a slice of bread into the pumpkin custard, coating both sides without soaking too long.
  4. Place the coated bread in the skillet and cook for 3–4 minutes per side until golden brown.
  5. Repeat with remaining slices, adding more oil to the skillet as needed.
  6. Serve warm with toppings of choice like maple syrup, powdered sugar, or whipped cream.

Notes

  • Use slightly stale bread to avoid sogginess.
  • Whisk custard thoroughly to avoid clumps of spices.
  • Don’t overcrowd the skillet—cook in batches for even browning.
  • Keep cooked slices warm in a 200°F oven if preparing in large batches.
  • Can be frozen for up to 2 months and reheated directly from frozen.
