  • 2 cups cucumber, sliced
  • 1/4 cup red onion, thinly sliced

  • 1 pinch salt
  • 1 pinch black pepper
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Peel, core, and cut the fresh pineapple into bite-sized chunks. Drain briefly if very juicy.
  2. Wash and slice the cucumber into half-moons or rounds.
  3. Thinly slice the red onion and soak in cold water for 5 minutes if desired, then drain.
  4. In a small bowl, whisk together lime juice, olive oil, salt, black pepper, and honey if using.
  5. Add pineapple, cucumber, red onion, and herbs to a large bowl.
  6. Pour the dressing over the salad.
  7. Gently toss until evenly coated.
  8. Refrigerate for 15 minutes before serving for best flavor.
