  • 4 cups fresh pineapple chunks
  • 2 red bell peppers, cut into chunks
  • 2 green bell peppers, cut into chunks
  • 1 large red onion, cut into chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup pineapple juice
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together soy sauce, brown sugar, olive oil, garlic, ginger, and pineapple juice.
  2. Add chicken cubes to the marinade and toss until coated.
  3. Cover and refrigerate for at least 1 hour or up to 8 hours.
  4. If using wooden skewers, soak them in water for 30 minutes.
  5. Cut pineapple, peppers, and onions into evenly sized pieces.
  6. Thread chicken, pineapple, peppers, and onions onto skewers, alternating ingredients.
  7. Preheat grill to medium-high heat.
  8. Lightly oil the grill grates.
  9. Place kabobs on the grill and cook for 12 to 15 minutes.
  10. Turn every few minutes for even cooking and grill marks.
  11. Cook until the chicken reaches an internal temperature of 165°F (74°C).
  12. Remove kabobs from the grill and allow them to rest for 5 minutes.
  13. Garnish with fresh herbs if desired.
  14. Serve immediately with your favorite side dishes.
