  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup crushed pineapple, well drained
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. Cream butter and sugar together until light and fluffy.
  3. Add eggs one at a time, mixing well, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually mix dry ingredients into the wet ingredients until just combined.
  6. Fold in the drained crushed pineapple and coconut if using.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 25–30 minutes until lightly golden and a toothpick comes out mostly clean.
  9. Cool completely before slicing into bars.

Notes

  • Drain the pineapple well to avoid soggy bars.
  • Do not overmix the batter to keep bars tender.
  • Allow bars to cool fully before cutting for clean slices.
  • Bars taste even better the next day.
