Pecan pie muffins that taste just like classic pecan pie in soft, bakery-style muffin form. Sweet, nutty, and easy to make, they’re perfect for breakfast, brunch, or dessert.

  • 1 cup chopped pecans
  • 1 cup brown sugar, packed
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together brown sugar, eggs, melted butter, and vanilla until smooth.
  3. In a separate bowl, mix flour, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and mix just until combined.
  5. Fold in the chopped pecans gently.
  6. Divide the batter evenly among the muffin cups, filling about three-quarters full.
  7. Bake for 20–25 minutes until the tops are set and lightly golden.
  8. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

  • Toasting the pecans before mixing enhances flavor.
  • Do not overmix the batter to keep muffins tender.
  • These muffins taste even better the next day.
