  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 2 tablespoons chopped peanuts (optional)
  • 2 tablespoons mini chocolate chips (optional)
  • 1 tablespoon chia seeds (optional)
  • 2 tablespoons granola (optional)

Instructions

  1. Line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract.
  3. Mix until completely smooth and creamy.
  4. Spread the mixture evenly into the prepared pan.
  5. Freeze for 2 to 3 hours until firm.
  6. In a microwave-safe bowl, melt chocolate chips and coconut oil together until smooth.
  7. Pour and spread the chocolate evenly over the frozen yogurt layer.
  8. Sprinkle with peanuts, mini chocolate chips, granola, or chia seeds if desired.
  9. Return the pan to the freezer for 30 minutes or until the chocolate is set.
  10. Remove from the pan using the parchment paper.
  11. Cut into 12 bars using a warm knife.
  12. Serve immediately or store in the freezer.
