Peach, Tomato & Corn Arugula Pasta Salad is a vibrant summer pasta salad featuring juicy peaches, sweet corn, ripe tomatoes, peppery arugula, fresh basil, and a light lemon vinaigrette.

Ingredients

  • 12 ounces rotini pasta
  • 2 large ripe peaches, diced
  • 2 cups cherry tomatoes, halved
  • 2 cups fresh corn kernels
  • 3 cups arugula
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1/2 cup feta cheese

Instructions

  1. Cook pasta until al dente and cool.
  2. Prepare peaches, tomatoes, corn, basil, and arugula.
  3. Whisk together olive oil, lemon juice, honey, salt, and pepper.
  4. Combine pasta and produce in a large bowl.
  5. Pour dressing over salad.
  6. Toss gently until combined.
  7. Add feta if desired.
  8. Serve chilled or at room temperature.

Notes

  • Use ripe but firm peaches.
  • Add arugula just before serving.
  • Fresh corn provides the best flavor.
