Pavlova with Berries is a light and elegant dessert featuring a crisp meringue shell, soft marshmallow-like center, and fresh berries topped with whipped cream.

Ingredients

  • 4 large egg whites
  • 1 cup sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon vinegar
  • 1 cup heavy cream
  • 2 cups fresh berries (strawberries, blueberries, raspberries)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 250°F (120°C) and line a baking tray with parchment paper.
  2. Beat egg whites until soft peaks form.
  3. Gradually add sugar while beating until stiff, glossy peaks form.
  4. Gently fold in cornstarch and vinegar.
  5. Spoon mixture onto tray and shape into a round with a slight center dip.
  6. Bake for 60–75 minutes until the outside is dry.
  7. Turn off oven and let pavlova cool inside with door slightly open.
  8. Whip heavy cream until soft peaks form.
  9. Top cooled pavlova with whipped cream and fresh berries.
  10. Serve immediately.

Notes

  • Ensure bowl is clean and grease-free for proper meringue.
  • Add sugar gradually for best texture.
  • Do not open oven during baking to avoid cracks.
  • Store meringue base separately in an airtight container.
  • Add toppings just before serving for best results.
