Ingredients

  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 12 Oreo cookies, roughly crushed
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix eggs, milk, oil, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix gently until just combined.
  5. Fold in crushed Oreo cookies and optional chocolate chips.
  6. Divide batter evenly into muffin cups, filling 3/4 full.
  7. Top with extra Oreo pieces if desired.
  8. Bake for 18–22 minutes or until a toothpick comes out clean.
  9. Cool slightly before serving.

  • Do not overmix the batter to keep muffins soft.
  • Use fresh baking powder for best rise.
