One Pot Chicken Parmesan Pasta – Easy, Cheesy & Weeknight-Perfect

An easy one pot chicken parmesan pasta made with tender chicken, pasta cooked in rich tomato sauce, and plenty of melted cheese. A comforting, family-friendly dinner with minimal cleanup.

Ingredients

  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups marinara sauce
  • 2 cups chicken broth
  • 8 oz penne or rotini pasta (uncooked)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or deep skillet over medium heat.
  2. Add chicken pieces, season lightly, and cook until browned and cooked through. Remove and set aside.
  3. In the same pot, add onion and cook until softened, then stir in garlic until fragrant.
  4. Add marinara sauce, chicken broth, Italian seasoning, salt, and pepper. Bring to a gentle simmer.
  5. Stir in uncooked pasta, cover, and cook until pasta is tender, stirring occasionally.
  6. Return chicken to the pot and mix well.
  7. Stir in parmesan cheese, then sprinkle mozzarella over the top.
  8. Cover and cook for 2–3 minutes until cheese is melted. Garnish and serve.

Notes

  • Use short pasta shapes for even cooking.
  • Add a splash of broth if the sauce becomes too thick.
  • Chicken thighs can be used for a juicier result.
  • Best served fresh, but leftovers reheat well.
