No-Bake Pumpkin Pie Bites are the perfect fall dessert made from leftover or store-bought pumpkin pie, coated in sweet candy for a bite-sized treat that requires no oven time.

  • 1 (9-inch) baked and chilled pumpkin pie
  • 1 (16-ounce) package vanilla candy coating or almond bark

Instructions

  1. Reserve some of the pie crust to crumble on the bites after coating.
  2. Break up the chilled pumpkin pie (filling and crust) into a mixing bowl or the bowl of an electric mixer.
  3. Beat on low speed or mix with hands until the mixture comes together in a moist, pliable ball.
  4. Roll into 2-tablespoon-sized balls and place them on a parchment-lined baking sheet.
  5. Freeze for 30 minutes or refrigerate for 2 hours until firm.
  6. Melt candy coating according to package instructions.
  7. Dip each chilled pie ball into the melted coating using a fork, allowing excess to drip off.
  8. Place coated balls back onto the parchment and sprinkle with reserved pie crust crumbles.
  9. Let them rest until the coating is fully set before serving.

Notes

  • Use leftover or store-bought pumpkin pie for convenience.
  • Adjust consistency by adding crushed cookies if too wet, or cream cheese if too dry.
  • Candy coating can be substituted with vegan or dark chocolate alternatives.
  • Store in the fridge for up to 5 days or freeze for 2–3 months.
