Instructions

  1. Mix crust ingredients and press into a 9-inch pan.
  2. Refrigerate crust while preparing filling.
  3. Cook blackberries, sugar, and lemon juice until softened.
  4. Add cornstarch slurry and cook until thickened. Cool completely.
  5. Beat cream cheese until smooth.
  6. Add powdered sugar, vanilla, and lemon juice.
  7. Whip cream to stiff peaks if using fresh cream, then fold into filling.
  8. Spread filling over crust.
  9. Top with cooled blackberry mixture.
  10. Chill at least 6 hours or overnight before serving.
