  • 5 fresh nectarines, sliced
  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter
  • 1/2 cup milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash and slice the nectarines.
  3. Combine nectarines, raspberries, sugar, cornstarch, lemon juice, and vanilla extract in a large bowl.
  4. Transfer the fruit mixture to a baking dish.
  5. In another bowl, whisk together flour, sugar, baking powder, and salt.
  6. Cut in the cold butter until coarse crumbs form.
  7. Add milk and stir until a soft dough forms.
  8. Drop spoonfuls of dough over the fruit mixture.
  9. Bake for 40-45 minutes until golden and bubbling.
  10. Allow to cool for 15 minutes before serving.
  11. Serve warm with vanilla ice cream if desired.
