Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with paper liners.
  3. Whisk together flour, baking powder, salt, and cinnamon.
  4. In another bowl whisk eggs, sugar, oil, milk, and vanilla.
  5. Add wet ingredients to dry ingredients and mix until just combined.
  6. Gently fold in diced nectarines.
  7. Fill muffin cups three-quarters full.
  8. Add coarse sugar or streusel topping if desired.
  9. Bake for 18 to 22 minutes until golden brown.
  10. Cool for 5 minutes in the pan.
  11. Transfer to a wire rack to cool completely.
  12. Serve and enjoy.
