Nectarine Crumble Bars are a simple and delicious summer dessert with a buttery crust, juicy spiced nectarine filling, and a golden crumb topping. Perfect for barbecues, picnics, or everyday treats.

  • 3 cups all-purpose flour
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup cold unsalted butter, cut into small pieces
  • 1 large egg, whisked
  • 5 cups sliced ripe nectarines (about 46 large nectarines)
  • ½ cup granulated sugar (for filling)
  • ¼ teaspoon ground cinnamon (for filling)
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with foil and spray with cooking spray.
  2. In a food processor, combine flour, sugars, baking powder, cinnamon, nutmeg, and salt. Pulse to mix.
  3. Add cold butter and pulse until the mixture forms coarse crumbs.
  4. Add the whisked egg and pulse again until the dough starts to form. Mix by hand if needed.
  5. Press a little over half of the dough mixture into the prepared dish to form a crust.
  6. Bake crust for 15 minutes, then remove from the oven.
  7. Meanwhile, in a large bowl, stir together sliced nectarines, ½ cup sugar, and ¼ tsp cinnamon.
  8. In a small bowl, whisk together cornstarch, lemon juice, and vanilla extract. Pour over the nectarines and fold to combine.
  9. Use a slotted spoon to spread the nectarine mixture over the baked crust.
  10. Sprinkle remaining dough mixture over the fruit as the crumb topping.
  11. Bake for 40–45 minutes until golden brown.
  12. Cool completely before cutting into bars and serving.

Notes

  • No need to peel the nectarines.
  • Let the bars chill before slicing for clean edges.
  • Store in an airtight container in the fridge up to 5 days.
  • Bars freeze well for up to 3 months.
  • Serve with ice cream, yogurt, or whipped cream for extra indulgence.
