  • 1 tbsp heavy cream (each frosting)
  • 2 cups powdered sugar (vanilla frosting)
  • 1¾ cups powdered sugar (chocolate frosting)
  • ¼ cup cocoa powder (chocolate frosting)
  • 23 tbsp strawberry reduction (strawberry frosting)
  • 2 cups powdered sugar (strawberry frosting)

Instructions

  1. Prepare the strawberry reduction by blending 2 cups of strawberries into a puree. Simmer on medium heat until reduced to ½ cup. Cool completely.
  2. Preheat oven to 350°F. Grease and flour three 8-inch cake pans.
  3. For each cake layer, mix dry ingredients in one bowl. Add wet ingredients and mix until smooth. For chocolate, add cocoa powder. For strawberry, add strawberry reduction and emulsion.
  4. Pour each batter into prepared pans and bake for 23–25 minutes or until a toothpick comes out clean. Let layers cool completely.
  5. Make each frosting by creaming butter and shortening. Add flavor-specific ingredients (vanilla bean paste, cocoa powder, or strawberry reduction), then add powdered sugar and cream. Whip until smooth.
  6. Level cake layers using a knife. Stack chocolate layer first, frost, then vanilla, frost, and finally strawberry layer. Apply crumb coat and chill for 15–20 minutes.
  7. Finish frosting the cake using swirled or striped technique. Decorate with optional toppings.

  • Crumb coat the cake before final frosting for a cleaner finish.
